Peel 5 cucumbers.
Cut them so you can scoop out the seeds with a spoon into a wire strainer over a bowl. There is a lot of juice in with the seeds that you won't want to lose.
Squish the seeds and pulp in the strainer getting all the juice you can from them.
Cut cucumbers into pieces and put them in a blender.
Pour juice from pulp into a blender and add 2 cups of water.
Add 1/2 cup lemon juice and a teaspoon of Redmond Real Salt and sweeten it with 3 cups stevia scoopable sweetener (or to taste). Blend well then strain it a couple times to get all the pulverized flesh of the cucumbers out.
Fill 4 pint jars equally and topped with water leaving headspace.
Water bath them.
When you go to use it, pour it into a container that will hold 3 pints of liquid.
Pour over ice and enjoy.
To make a gallon for ready-to-drink I use 2 large cucumbers, 1 1/2 cups of sweetener, and 1/4 cup of lemon juice. Just a pinch or so of salt is optional
